Not all beef are created equal
Unlike any other meat, Wagyu beef is the world best because it is highly marbled. Marbling refers to the visible layers of muscle fat. The higher the marbling score, the more flavorsome, tender and juicy the meat is. The high fat in Wagyu is actually a good thing. It gives a higher percentage of omega-3 and omega-6 fatty acids and more monounsaturated fats than other beef. This soft fat has a low melting point and not only creates the wonderful texture of Wagyu beef but also holds most of the flavor. It literally melts in your mouth!
